Giant Oreo stuffed crinkles


I should probably call them cakes since they are so big! I used regular Oreos but you can choose the mini variety to make smaller cookies. I would really like to try them with peanut butter oreos!

RECIPE

Makes around 12 cookies

Ingredients

227g (1 cup) butter

500g (2 cups) of sugar

4 medium eggs

60 ml (1/4 cup) buttermilk

400g (3 1/3 cup) plain flour

75g (2/3cup) unsweetened cocoa powder

2 tsp baking powder

1/2 tsp bicarbonate of soda

1tp salt

12 oreos

120g icing sugar

a baking sheet, greased with butter and lined with baking parchment

Bake in 190°C (375°F) for around 15 minutes

Instructions

- with a wooden spoon or an electric mixer, beat together the butter and sugar until light and fluffy

- stir in the eggs, one at the time

- beat in buttermilk

- in a separate bowl, combine the flour, icing sugar, bicarbonate of soda, baking powder and cocoa

- slowly add the dry ingredients to the wet mixture, beating with a wooden spoon or electric mixer on a low speed setting

- if the dough feels too wet, add a little bit of flour

- shape into a ball and wrap in clingfilm

- chill in the freezer for about 15 minutes

- take out the dough and weigh on a scale

- divide the total weight by 12 ( or 24 if making smaller cookies) - it will tell you how much dough you should take for each cookie

- weight out each cookie untill you run out of dough

- to make it easier for you to handle the dough, you can rub some butter or oil on your hands

- sift th eicing sugar into a separate bowl

- shape each piece of dough into a ball

- preheat the oven to 190°C (375°F)

- to stuff them with oreos, gently push the cookie in the middle of the dough ball and stretch the dough over it so it covers the whole cookie

- shape into a neat ball and roll in the icing sugar

- place the cookie ball in the freezer and continue with the rest of them

- keep them in the freezer until you fininsh stuffing all the cookies and the oven preheats

- roll them in the icing sugar again just before you arrange them on a baking tray

- to bake the cookies, arrange on baking tray with wide gaps inbetween them (around 3-4 cm)

- bake for 14-15 minutes, cool on the baking sheet for 5 minutes, after that you can transfer them to a cooling rack.
