Walnut rugelach


This is an old family recipe from my great grand mother, who used to make them every year for Christmas.

RECIPE

Makes around 30 cookies, depending on their size

Bake in 180 C (356 F) for around 15 minutes

Ingredients

300g (2 cups) plain flour

250g (around 1 1/4 cup) cold butter

130g (around 1 1/4 cup) icing sugar plus more for dusting

150g (around 1 1/4 cup) ground walnuts

1 egg yolk

1/2 teaspoon baking powder

a baking tray, greased with butter and lined with baking parchment

Instructions

- in a large bowl, mix the flour, baking powder, ground walnuts and icing sugar

- work in the butter, until a soft dough forms

- add the egg yolk

- shape the dough into a ball and chill for at least 30 mins

- take the dough out of the fridge and shape into small horns

- leave at least 1cm gap between each cookie while baking

- let the cookies cool down completely on the baking tray
