Marbled meringues


RECIPE

Ingredients

6 egg whites

300g granulated sugar

lemon slices to clean the bowl

red food colouring

Instructions

- heat the oven to 200 C

- clean the bowl and utensils with lemon slices

- rinse with cold water and dry with a paper towel

- sift the sugar onto a baking tray lined with baking parchment and place in the oven for around 10 minutes or untill the sugar has started dissolving on the edges

- reduce the oven temperature to 100 C

- start beating the egg whites on high speed

-beat untill the egg whites are foamy and soft peaks have started to form

meringue has cooled down completely

- drizzle the food colouring into the meringue and stir gently with a round bladed knife, taking care not to mix in the food colouring completely

- spoon out the meringues onto a baking tray

- bake for around 1 1/2 hours in the oven or until firm to touch
