Gluten-free coconut cookies
Crunchy, gluten-free coconut cookies, they are so quick to make. I had some leftover egg whites from making Skolebrod the other day and decided to use them up for these cookies. Delicious :)
Ingredients
3 egg whites
150g (around 1 cup and 1 tablespoon) desiccated coconut
150g (1 1/2 cup) icing sugar
a baking tray, linead with baking parchment
Instructions
-preheat the oven to 125 C (257 F)
- in a clean and dry bowl, beat the egg whites until soft peaks start to form
- start adding the icing sugar, one spoon at a time until the sugar has been fully incorporated
- continue beating untill stiff peaks form
- gently stir in the coconut with a spatula
- drop the batterr on to the prepared baking sheet and bake for around 40-60 minutes
- if the cookies get browned too fast -reduce the oven temperature
- to check if they are ready - try peeling one off the baking parchment, it's ready when the cookies come off easily. If they stick or break - bake for a few minutes longer and test again
