Home made Oreos
Everything tastes better when it's home made - these cookies are delicious!
Ingredients
for the cookie dough:
260g plain flour
1 teaspoon baking powder
40g cocoa powder
pinch of salt
110g butter, at room temperature
170g icing sugar
1 egg
15g milk
25g dark chocolate, grated
for the filling:
250g icing sugar
50g butter, at room temperature
30g milk
a baking tray, lined with greasproof paper
cookie stamps (like this)
Instructions
- in a medium bowl, sift together the flour, cocoa, baking powder and salt
- in a separate bowl, beat the butter and egg until pale
- add the icing sugar and milk and beat until incororated
- mix together the dry and wet ingredients
- add the grated chocolate and knead for a few seconds until the dough comes together
- wrap in a cling film and chill for 30 minutes
- roll out the dough to 3 mm thickness
- cut out circles from the dough and stamp each circle with the cookie stamp
- line on a prepared baking sheet
- bake in 175C (350 F) for around 13 minutes
- meanwhile make the filling
- beat the icing sugar, butter and milk until smooth
- when the cookies have cooled down comletely, spread the filling on one cookie and press another one on top of it
