Blackcurrant cheesecake ice-cream cake


Delicious frozen cheescake made with jelly (jello) - you can choose any flavour you like, I made this one with blackcurrant and one with cherry jelly last week. I made the base from a simple cupcake recipe, can't wait to experiment with different flavours!

Ingredients

for the base:

130g unsalted butter

100g granulated sugar

2 eggs

96g plain flour

1 1/2 teaspoon baking powder

2 tablesoons of milk

a medium sized spring form pan (like this), greased with butter

for the cheescake:

300g cream cheese

300ml whipped cream

1 packet of concentrated jelly

200g granulated sugar

Instructions:

- start by making the cupcake base

- in a medium bowl, beat together the butter and sugar

-add the eggs, one at a time and mix until fully incorporated

- sift together the flour and baking powder and add to the wet ingredients

- add the milk and stir untill all is fully mixed

- bake in 190 C (374 F) for around 25 minutes

- while the cake cools, whip the cream cheese with sugar in a large bowl

- in a microwave, melt the concentrated jelly on a high power for around 30 seconds

- quickly add around 2 tablespoons of the cream cheese to the liquid jelly and stir until dissolved

- add the whipped cream to the cheese and keep adding the jelly mixture, one tablesoon at a time

- gently mix all the ingredients untill the jelly is fully incorporated

- cut out a slightly smaller circle from the baked cupcake base ( I covered it with a round lid and cut off the edges with a knife)

-place the smaller cake back in a springform pan (cleaned) and cover with the cheescake mixture, filling the gaps on the edges first

- place in the freezer for around 2 hours
