Faworki - Polish carnival fried pastry
Faworki, chrust, angel wings... They are a traditional Polish pastry eaten in the carnival, usually on Fat Thursday. The are crunchy, sweet and very easy to make. I've already made one batch this week and saved half of the dough to make more on Thursday :)
Ingredients
400g plain flour
50g butter
1 medium egg
4 egg yolks
1 tablespoon of icing sugar ( and more for dusting)
7 tablespoons of double cream
1 tablespoon of spirit or distilled vinegar
a pinch of salt
lard or rapeseed oil to fry
a pastry cutter (like this)
Instructions
- in a large bowl, mix the flour and salt
- add the butter and rub with your fingers until it dissaears in the flour
- in a separate bowl, combine beat the egg and yolks with one tablespoon of icing sugar until thick and pale yellow (around 5 minutes with an electric mixer)
- add to the flour and mix with your hand untill fully combined
- add the cream and spirit/vinegar and knead until the dough comes together to a ball (if it's too dry - add more cream or water)
- cover and let rest for at least half an hour
- roll out on a lightly floured surface, fold in to half and roll out again. Repeat this step a few times - the pastries will puff up nicely because of this.
- roll out the pastry thinly and cut it into stripes with the pastry cutter (around 2 cm wide)
- cut each stripe into sligly smaller stripe (either in half or more, depending on how long your stripes are)
- make a small cut in the middle of each stripe and pull the end of the stripe through it to make a twist
- heat the oil/lard in a large saucepan and when hot, drop the pastry into it ( be careful it will be very hot!)
- the pastries need only a few minutes of frying - they should have light golden colour when ready
- drain the pastries with a slotted spoon and dust with icing sugar
