Chocolate lava cakes
This can be prepared in advance and chilled in the fridge for up to 24 hours before baking.
RECIPE
Ingredients
300g dark chocolate
75g (1/3 cup) soft unsalted butter
125g (5/8 cup) granulated sugar
4 medium eggs, at room temperature and beaten
50g (1/3 cup + 1 tablespoon) plain flour
4 tablespoons milk
icing sugar for dusting
cocoa powder for dusting
4 or 6 ramekins or pudding tins, greased with butter and dusted with cocoa powder
Instructions
- melt the chocolate in a microwave or over simmering water. To melt the chocolate in microwave: set in a microwavable bowl and microwave for 1 minute on high power setting. Stir and microwave for another minute. To melt over water: set the chocolate in a bowl over simmering water, not letting the bowl touch the water. Let it melt slowly, stir occassionally as needed.
- leave the chocolate to cool down a little
- with a wooden spoon or an electric mixer, beat the butter until soft and fluffy
- add the sugar and eggs, one at a time
-sift in the flour and beat until all is incorporated
- stir in the melted chocolate
- add the milk
- grease the ramekins with butter and dust with cocoa powder
- preheat the oven with a baking tray inside to 200 C (400 F)
- place the ramekins on a hot baking tray and bake for around 10 minutes
- take out of the oven and turn the ramekins upside down on a late so the cakes fall out
- dust with icing sugar and serve
