Dark chocolate mousse in chocolate moulded cups


Delicate melt in mouth chocolate mousse in homemade chocolate moulded cups, I think they would make a nice Valentine's Day gift ! They are easy to make too - the most difficult part is waiting for the mousse and cups to set in the fridge, but trust me you will not regret it :) Are you baking anything for the Valentine's Day?

Ingredients

for the chocolate cups:

300g dark chocolate

for the chocolate mousse:

150g dark chocolate

20ml espresso

2 eggs

40g granulated sugar

75ml double cream

a few strawberries to decorate

cocoa powere for dusting

mini silicone cupcake moulds (similar here or if you're in Valentine's mood)

Instructions

to make the cups:

- start by making the chocolate moulds

- in a medium bowl, melt the chocolate over simmering water

- with a brush or a spoon, drop around 1 tablespoon of chocolate into a silicone mould and spread over the edges - to about middle of the mould edge.

- carefully place another mould on top of the chocolate, pressing on the edges so that the melted chocolate fills the mould to the top

- place in the fridge until the chocolate has set (around half an hour)

- to release, carefully peel off the bottom mould followed by the top one

- repeat with the rest of the moulds

to make the mousse:

- in a medium pan, melt the chocolate with espresso over simmering water

- separate the eggs and beat the yolks with 20g of sugar until it has dissolved

- whip the cream until stiff

- beat the egg whites until stiff peaks form and then slowly add the remaing 20g of sugar and continue beating

- add the egg yolk mixture to the cooled chocolate and stir until combined

- quickly add the whiped cream and whisk to combine

- slowly fold in the egg whites to the chocolate mousse

- divide the chocolate mousse between the chocolate cups and chill in the fridge for around 3 hours

- decorate with strawberries and dust with some cocoa powder
