Yum Yums - British doughnuts


These funny named dughnuts are a cross between a croissant and a dougnuts. Supposedly, they are the fastest selling treat in the Gregg's bakery. Now you can try making your own at home :) I used James Morton's recipe but added vodka to keep the oil from soaking the doughnuts too much.

Ingredients

500g stong white bread flour

14g easy bake instant yeast

30g sugar

a teaspoon of sugar

250g lukewarm water

1 medium egg

100g unsalted butter

2 tablespoons of vodka or white distilled vinegar

for the icing:

250g icing sugar

60ml water

oil for frying

a thermometer (similar here)

Instructions

- in a large bowl sift together the flour, salt, yeast and sugar

- mix with a spoon

- dice the chilled butter into thin slices and add to the dry ingredients

- with your hand, rub in the butter to the dry ingredients

- add the water, vodka/vinegar and egg, and knead until the dough comes together

- cover and leave to rise for around one hour

- take out the dough onto a lightly floured surface and roll out into a larhe recatngle (around 58 x 28 cm)

- fold in the edges to the middle of the rectangle, so that the edges touch in the middle

- fold again as if you were closing a book - repeat this step five times

- cover the folded dough and leave to rise for around 1.5 hours

- roll out the dough one more time and cut into 2cm strips

- twist two strips together (like a rope)

- cover and leave to rise until doubled in size, around half an hour

- in a large pan, heat the oil to 160 C

- fry the yum yums on each side untill golden in colour

- mix the icing sugar with water and cover each yum yum generously
