Vanilla rice pudding cake
This is a simple, yet very comforting cake. You will love it if you like rice pudding :) The vanilla pod makes a huge difference in this cake but if you want to, you can substitute it with vanilla extract or vanilla sugar.
Ingredients
for the base:
140g plain flour
100g unsalted butter
a pinch of salt
10 ml whole milk
15g granulated sugar
for the rice pudding:
750ml whole milk
70g sugar
127g white rice
2 medium eggs
1 vanilla pod
a 20cm cake pan, greased with butter (like this)
Instructions:
for the base:
- in a medium bowl, sieve the flour, salt and sugar
- add the butter and rub it into the flour with your fingers
- add the milk and knead until combined
- wrap in clingfilm and rest in the fridge for around 1 hour
for the pudding:
- in a medium saucepan, scrape out the vanilla seeds fom the pod into the milk
- add the sugar and rice
- cook on low heat for around half an hour, until the rice has cooked
- leave to cool down completely before adding the eggs ( they will cook if the pudding is hot!)
- line the base of a springform pan with the pastry and top with the rice pudding
- bake in 180C for around 40 minutes
- sprinkle with icing sugar when done
