Mini peanut butter buns with Nutella icing


Can you resist these cute little buns? The mini size makes them a perfect lunch snack. You can start making them the evening before to enjoy a delicious breakfast quicker :)

Ingredients

for the dough:

I used the same recipe as or my cinnamon buns with caramel frosting.

for the filling:

70g unsalted butter, very soft

90g granulated sugar (if using a sweetened peanut butter, you can omitt the sugar)

around 190g peanut butter, either smooth or crunchy is fine!

for the icing:

4 tablespoons nutella

10g cocoa powder

around one tablespoon of milk

24 mini cupcake cases (similar here or here)

Instructions

for the dough:

- follow the same instructions as here, but roll out the dough to 30 x 70cm instead

for the filling:

- rub the soft butter all over the rolled dough

- in a bowl, mix the peanut butter with peanut butter

- spread evenly over the dough

- roll up starting rom the long side

- divide the total lenght of the rolled dough by 24

- measure out equal portions and cut off with a sharp knife

- bake in 190C for around 20 minutes

for the icing:

- in a bowl mix the nutella with cocoa powder and add milk

- beat with a wooden spoon until you achieved a runny consistency (but not too runny!)

- add more milk if neccessary
