Blackberry cheesecake brownie
Another variation of my fudgy, dark chocolate brownies. You can use any fruit/jam you like, but I think the blackberries comlement the dark chocolate really well.
ingredients
for the brownie:
225g unsalted butter
100g dark chocolate
200g sugar
4 eggs
50g plain flour
50g cocoa powder
pinch of salt
for the cheescake:
225g cream cheese
50g blackberry jam
1 egg yolk
a few blackberries for topping
a square or rectangular baking tray ( like this), greased with butter and covered with cocoa powder
instructions
for the brownie:
- put the butter and chocolate into a medium sized bowl and set over simmering water
- stir frequently until fully melted and set aside to cool down
- in a separate bowl, beat the eggs with sugar until pale and fluffy
- add the melted chocolate and butter to the egg mixture
- in another bowl, sift the flour and cocoa with salt
- add to the wet ingredients and stir until fully mixed
for the cheese mixture:
- in a medium bowl, beat together the cream cheese, jam and egg yolk
- reserve around 60g of the brownie batter and pour the rest to a prepared tin
- top with the cheese mixture
- pour the reserved brownie batter over the cheescake layer, aiming to form lines across the tin
- with a skewer, draw lines across the brownie lines to form chevron pattern
- top with some fresh blackberries
- bake in 180 C (360 F) for around 20-25 minutes
