Double chocolate cookies stuffed with peanut butter
Soft and chewy double chocolate cookies filled with peanut butter - they are just amazing :) Dark chocolate and cocoa make them so rich and the smell is incredibly intense.
ingredients
50g unsalted butter
100g granulated sugar
25g cocoa powder
100g dark chocolate
1 medium egg
1/4 teaspoon baking soda
140g plain flour
around 5-6 tablesoons of peanut butter ( I used crunchy)
sea salt (optional)
a large cookie sheet (like this one)
instructions
- in a medium saucepan, melt the chocolate, butter and sugar on a very low heat
- let the mixture cool down to room temperature before mixing in the egg
- add the cocoa, flour and baking soda and mix until smooth dough forms
- leave in the fridge for ar least half an hour
- use around 20g to start for each cookie
- roll into a ball then press in the middle to make a small hole
- fill with a peanut butter and cover with a small piece of dough
- roll into a ball again, making sure the peanut butter is fully concealed
- sprinkle some sea salt on top
- arrange on a baking tray and bake in 175C for around 8 minutes
- open the oven and flatten the tops with a spoon
- bake for another 2 minutes
