Fluffiest apple cinnamon scones


ingredients

225g self-raising flour

1/2 teaspoons bicarbonate of soda

2 teaspoon cinnamon

60g cold unsalted butter

80g granulated sugar

1 apple (I used Bramley)

150ml whole milk

a baking tray, greased with butter and lined with baking paper (I like this one)

instructions

1. In a medium bowl, sift the flour, 1 teaspoon cinnamon and soda.

2. Dice the butter and add to the flour.

3. Rub the butter into flour with your fingers, lifting your hands above the bowl so that the scones are very soft.

4. Add 60g of sugar.

5. Peel and dice the apple and add to the scone mixture.

6. With a round bladeed knife mix in one tablespoon of milk at a time until it comes together and holds it shape.

7. Shape the dough into a ball and transfer to a baking tray.

8. Flatten the ball to a disc (20cm).

9. Brush the scone with milk and sprinkle with some sugar mixed with cinnamon.

10. Score the scone into 8 pieces with a knife.

11. Bake in 220C for 15 minutes.
