Rooibos (Redbush) tea babka


Easter cake for tea lovers :) I used my favourite Redbush tea but this recipe will work with any kind of tea, what's your favourite? The taste is very subtle, but this may vary depending on a type of tea you're using. I guess it would be stronger if you chose to make an Earl Grey babka or used a fruit tea.

ingredients

for the babka:

200g plain flour

50g cornflour

150g granulated sugar

130g unsalted butter

4 eggs

5 tablespoons milk

2 teaspoons baking powder

2 teabags of Rooibos (Redbush) teas

for the icing:

around 200g icing sugar

a few tablespoons of water

mini eggs to decorate

instructions

1. Pour the milk into a small saucepan.

2. Open the teabags and add tea to the milk.

3. Gently heat the milk for a few mnutes until warm.

4. Leave to steep for at least half an hour (the longer you rest it, the better and stronger taste).

5. In a large bowl, beat the butter with sugar until soft and fluffy.

6. Add the eggs, one at a time and beat well after each addition.

7. Gradually add the flour with baking powder while beating.

8. Add the milk and continue beating until all the ingredients are mixed.

9. Transfer to the bundt pan and bake in 160C for around 15 minutes then increase the temperature to 190C and bake for further 15-20 minutes.

10. To make the icing, first sift the icing sugar through a sieve.

11. Gradually add the water, one tablespoon at a time and mix. Add enough water for the icing to reach a runny consistency (it should not be transparent - add more icing if too runny).
