Easter Pavlova wreath


Pretty Easter meringue wreath filled with passion fruit curd... It would look lovely as a centrepiece on the Easter table :) If you are a fan of Pavlova, you must try this Easter version! Instead of mini eggs you can use fruit to decorate it. Do you know what you're baking this Easter? Let me know in comments!

ingredients

for the passion fruit curd:

3 passion fruits

5 egg yolks

150g granulated sugar

100g unsalted butter

for the meringue:

5 egg whites

250g caster sugar

1 teaspoon cream of tartar

mini eggs to decorate

a large bakng tray, greased with butter and lined with baking parchment (similar here)

piping bag with a decorative nozzle attached (available here)

instructions

for the passion fruit curd:

1. Cut the passion fruits in halves and spoon out the pulp and seeds into a medium pan.

2. Add rest of the ingredients and cook on medium heat.

3. Stir constantly until the curd thickens (around 10 minutes). Set aside.

for the meringue:

1. Place the egg whites in a clean, large bowl.

2. Beat with an electric mixer or a balloon whisk until foamy.

3. Add the cream of tartar and contnue beating untill soft peaks form.

4. Add the sugar, one tablespoon at a time and continue beating until stiff peaks form.

5. Transfer the meringue into a piping bag with a nozzle attached.

6. On a sheet of baking paper, draw a circle of a diamater that you want your wreath to be.

7. Place the baking paper on a greased baking tray.

8. Pipe little circles with the meringue, making sure they stick to each other.

9. Bake in 110C for 2 hours and cool the meringue down in an open oven.

- carefully transfer the meringue to a dish, cake stand, etc.

- fill the meringues with passion fruit curd and top with some mini eggs or fruit
