Coconut cake with apples
Soft and moist coconut cake with apples. The coconut flavour is not too overpowering and goes really nicely with the apples. Perfect with tea :)
ingredients
for the cake:
125 g unsalted butter, at room temperature
100 g granulated sugar
2 medium eggs
200 g plain flour
2 teaspoons baking powder
50 g desiccated coconut
100 ml coconut milk
2 apples
1 tablespoon lemon juice
for the icing:
around 100 g icing sugar
1 tablespoon of coconut milk
a small loaf pan, greased with butter and lined with baking parchment (similar here)
instructions:
1. Beat the sugar and butter with an electric mixer until soft and fluffy.
2. Add the eggs, one at a time, and continue beating.
3. Add the coconut milk and mix.
4. Sift the flour, baking powder and coconut in a large bowl.
5. Add the wet ingredients to the dry ingredients and mix with a spoon just until combined.
6. Peel, halve and core the apples.
7. With a knife, cut the tops of the apples.
8. Mix the lemon juice with a cup of water and dip the apples in it (it will stop them getting brown too quickly).
9. Transfer the batter into a prepared loaf tin and arrange the apples on top.
9. Preheat the oven to 160 C and bake for around one hour (until a toothpick comes out dry).
10. Mix the icing sugar with coconut milk until you reach a desired consistency, add more sugar or milk if too wet/thick.
11. Ice the top of the cake and sprinkle with some coconut.
