Vegan kiwi and coconut ice-cream
Easy kiwi vegan ice-cream made with coconut cream. You can't really taste the coconut cream, the kiwi flavour is very intense :) Can also be made into popsicles.
ingredients
around 600 g kiwi fruit
300 g coconut cream (if you can't find coconut cream, get 2 cans of coconut milk and store them upside down in the fridge for a few hours. Open and scoop out the separated cream)
100 g icing sugar
ice-cream cups to serve (similar here)
instructions
1. Cut the kiwis in half and spoon out the pulp into a medium sized bowl.
2. Blend to puree consistency.
3. Place the coconut cream in a separate bowl and whip with an electric mixer or a balloon whisk for a few minutes until stiff.
4. Add the icing sugar and beat a few seconds more until combined.
5. Add the kiwi puree to the coconut cream, one tablespoon at a time, gently mixing with a spatula after each addition.
6. Transfer the mixture into an ice-cream maker and then follow the manufacturers instructions.
7. If you don't have an ice-cream maker, transfer the mixture into a container and freeze.
8. Mix every half and hour for the first 2 hours to stop the ice crystals forming.
