Carrot and orange loaf


Deliciously moist carrot and orange cake with a hint of ginger, decorated with strawberries pretending to be carrots :)

ingredients

for the cake:

150 g unsalted butter at room temperature

160 granulated sugar

260 g plain flour

2 teaspoons baking powder

20 g fresh grated ginger

grated zest of one medium orange

170 g grated carrots

100 g buttermilk

for the strawberry carrots:

4-5 strawberries

150 g white chocolate

orange food colouring

for the icing:

around 200 g icing sugar

a few tablespoons of orange juice

orange food colouring

a loaf tin, greased with butter and dusted with flour

instructions:

for the cake:

1. Beat the butter and sugar until soft and fluffy.

2. Add the eggs, one at a time and beat with an electric mixer until combined.

3. Add the ginger, carrots and orange zest and mix with a spoon until combined.

4. Sift the flour and baking powder and add to the wet ingredient. Mix until all the ingredients are combined.

5. Transfer into a prepared loaf tin and bake in 170 C for around 50-60 minutes.

for the carrots:

1. Wash and dry the strawberries.

2. Microwave the chocolate in high power for around 90 seconds until melted.

3. Add a few drops of food colouring (until you reached a desired colour) and mix.

4. Dip the strawberries in the chocolate and shake off the excess chocolate.

5. Place on a baking paper and leave to set.

6. Add a couple more drops of food colouring into the leftover chocolate.

7. Transfer into a piping bad and pipe lines across the strawberries.

for the icing:

1. Mix the icing sugar with orange juice (add one tablespoon at a time) until you reached a thick consistency icing.

2. Add the food colouring and mix.

3. Transfer to a piping bag with a smallest round nozzle attached and pipe lines on the cake - make sure the cake has completely cooled down.

4. When the strawberries are set, arrange on top of the cake.
