Glacé cherry cake
Delicious soft cherry cake, goes wonderfuly with a cup of tea :) Make sure you wash the cherries properly to remove the sugar syrup before baking - it will make the cherries evenly distributed rather than falling down to the bottom.
ingredients
for the cake:
200 g glace cherries (washed and dried)
200 g self-raising flour
a pinch of salt
175 g unsalted butter, at room temperature
175 g granulated sugar
3 medium eggs
50 g ground almonds
for the icing:
around 200 g icing sugar
a few tablespoons of water
a medium sized babka, brioche or bundt pan, greased with butter and dusted with flour (similar here)
instructions
1. In a large bowl, beat the butter and sugar until pale and fluffy.
2. Add the eggs, one at a time, and continue beating.
3. Mix in the ground almonds with a spoon.
4. Combine the flour with salt and fold in to the wet ingredients.
5. Toss the cherries in one tablespoon of flour and add to the cake mix.
6. Gently mix until everything is combined.
7. Transfer into a prepared tin and bake in 170C for around one hour or until a toothpick comes out clean.
8. For the icing mix the sugar with a few tablespoons of water (add one at a time and mix) until it reaches very thick paste consistency.
9. Spread on top of the cake.
