Szyszki - puffed rice and caramel Polish sweets


Szyszki (Polish for pine cones) are a popular treat sold in schools in Poland. Easy to make, can also be made with puffed buckwheat or other cereals. Traditionally they are made with melted fudge and butter but I think my way is is easier and healthier.

ingredients

150 g puffed rice (available here)

400 g ready caramel sauce

1 tablespoon cocoa

1 tablespoon unsalted butter

instructions

1. In a small saucepan, warm up the caramel sauce and butter until it dissolves. Let cool down completely.

2. In a large bowl, combine half of the rice, and half of the caramel sauce.

3. Stir until the rice is completely covered in the caramel sauce and set aside.

4. Add one tablespoon of cocoa to the remaining caramel sauce and stir.

5. Mix the remaining rice with the chocolate sauce and stir.

6. With wet hands, shape the rice into small balls (you will need to wet your hands to make each ball).

7. Store in the fridge for up to 5 days.
