homemade snickers bars


These delicious bars consists of four layers: dark chocolate base, creamy honey nougat, salted caramel with peanuts and dark chocolate topping. It's a bit time consuming but the taste will be worth your effort :)

ingredients

200 g dark or milk chocolate

200 g salted peanuts

2 egg whites

150 g honey

425 g sugar

85 g unsalted butter

100 ml double cream

candy thermometer

medium sized square tin

aluminium foil

instructions

1. Melt the chocolate in a microwave for 2 minutes on a high power setting.

2. Line the baking tin with aluminium foil.

3. Spread half of the melted chocolate on a the base of a baking tin.

4. Place in a fridge to set.

5. Place 200 g of sugar in a medium pan.

6. Melt the sugar over medium heat while stirring constantly.

7. When the sugar has melted and turned amber colour, add the butter and stir until completely melted (be very careful as the mixture will bubble up).

8. Add the double cream and stir.

9. continue cooking for around 5 minutes while stirring constantly.

10. Add the peanuts and set aside to cool down.

11. Meanwhile combine the honey and 225 g of sugar in a medium sized pan.

12. Over a medium heat, melt the sugar with honey (do not stir).

13. Continue cooking until the syrup has reached 150 C (hard crack stage).

14. While the syrup is cooking, whisk two egg whites until soft peaks form.

15. When the syrup is ready, very slowly pour it into the egg whites while beating with an electric mixer.

16. Continue until the mixture is very thick.

17. Let the mixture cool down slightly and pour into the pan with chocolate base.

18. Place in the fridge for around 15 minutes to set.

19. Take it out of the fridge and spread the caramel sauce on top (reheat if it's too hard to spread).

20. Finally, spread the remaining chocolate on top and place in the fridge overnight or for a few hour to set before cutting into rectangles.

Note: Store in the fridge, it doesn't keep well in room temperature as it melts quickly.
