Coconut chia seeds and kiwi popsicles


If you've never tried popsicles with coconut milk before I highly suggest you try them! They taste very creamy, fresh and look pretty good too. These popsicles are extremely healthy and are made with only three super ingredients - coconut milk, chia seeds and kiwi, no sugars added! I used the amazing organic chia seeds from Sevenhills Wholefoods, I cannot recommend their products enough. ingredients

400 ml coconut milk

5 tablespoons chia seeds

1 kiwi

colourful popsicle sticks (available here)

popsicle mould (available here)

makes 4

instructions

1. Cut the kiwi into thin slices.

2. Arrange on the sides of the popsicle mould and freeze for around 10-15 minutes.

3. Meanwhile mix the coconut milk and chia seeds.

4. Fill in the moulds with the mixture and insert the sticks.

5. Freeze for a few hours or overnight.

6. To release the popsicles, pour boiling water on the sides of the mould (be careful not to burn yourself) and pull the sticks to remove the popsicles.
