easy cherry marshmallows


This is the easiest marshmallow recipe you'll ever find, no need for sugar thermometer or liquid glucose. You will only need electric mixer to beat the jelly and eggs together! Throw in some fresh fruit for a healthier version... If you can't find jelly cubes, skip step 4 and try dissolving the jelly powder in hot water so that the total weight adds up to 135 g.

ingredients

3 egg whites

2 black cherry concentrated jelly cubes (available here)

180 g granulated sugar

icing sugar for dusting

square or rectangle baking tin, lined with baking paper and dusted with icing sugar

instructions

1. In a medium bowl, combine the sugar and egg whites.

2. Set the bowl over a pan with simmering water and beat on high speed until the stiff peaks form.

3. Set aside.

4. Place the jelly cubes in another bowl and microwave for around 1 minutes or until dissolved completely.

5. Beat the liquid jelly with an electric mixer until it is very thick, pale and foamy. It will resemble beaten egg whites.

6. Carefully foll in the jelly fluff into the egg whites. Make sure all is evenly mixed. You can beat it with an electric mixer just for a few seconds.

7. Transfer the mixture into a prepared baking tin and even out the top with a wet knife.

8. Leave to set overnight and cut into squares with a wet knife. Roll in icing sugar.
